Premium Seafoods Group’s snow crab facility operates during the snow crab season employing approximately 90 employees. Most of the live crab arrive at the facility by boat. Live whole Atlantic Snow Crab is butchered into sections, cleaned, cooked in fresh water, and then frozen in a super-chilled salt brine solution. From the moment the crab enters the plant, to the moment it is packed frozen in a box, is approximately 60 minutes.
When packed, the sections are lined up in what is known as our “Signature Pack.” This refers to our method of arranging sections in the case to maximize space and increase product quality during shipping. Frozen and fully cooked, the product is boxed and ready for immediate sale and shipment around the world.
The snow crab facility is CFIA, USDA and EU approved and follows a HACCP based Quality Management Program. Every container of finished crab is tested by our in-house lab prior to shipping. |
